We are the Pacific Northwest's premier artisanal fermentery.  Located in the Tri-Cities : Washington, our Vision is to create the highest-quality (and many unique) ferments with locally grown vegetables to promote and strengthen regional food security while building #Community ~ celebrating the diversity and #Authenticity of all people ~ embracing the power of knowledge and excitement of #Discovery ~ and promoting the pride of makers and #Artisanship.

A List of Our Seasonal Ferments
CrunchyKraut
CrunchKraut, one of our flagship products, is named as such to convey the 'crunchy-ness' of raw/fresh sauerkraut vs. the 'mushy stuff' that many of us dreaded growing up. This variety is sweeter than it's cabbage-only cousin, PureKraut, due to the addition of carrots, onions, and garlic. It's a popular choice with kids!
KoreanKimchi
KoreanKimchi is our take on the classic Korean-fermented napa cabbage flavored with Korean gochu chili, anchovy sauce, ginger, and garlic.

We also have an A'Sparrow Kimchi (not pictured).  Same as above but made with Asparagus instead of the napa cabbage.
GarlicSambal
GarlicSambal is one of our  most addicting ferments, which is made with red-ripe jalapeno peppers and loads of garlic.
PureKraut
PureKraut is our classic fermented cabbage-only sauerkraut.
UmamiOnions
UmamiOnions is a one-of-a-kind unique Beyond Pickles product made with fermented red onions and infused with the smoky taste of 'morita' peppers - a Mexican-style chipotle pepper made from red jalapenos.
KimchiPeas (Sold out - may return Summer of 2025)
KimchiPeas is another unique fermented condiment made with sugar snap pea pods (instead of napa cabbage) and flavored with the same kimchi flavor of our KoreanKimchi.
TheWholeBeet (Sold out)
TheWholeBeet captures the essence of the entire beet plant - both the bulbs and the greens - to give you that earthy beet taste and a flavor that makes everything better. Small-farm grown in the magical volcanic soils of Eastern Washington.
DillPickles
DillPickles are simply dill, garlic, and 'full sour' fermented cucumbers, family-grown in the local area.

BeetKraut
Sauerkraut + Beets from small Eastern Washington farms + onions and garlic for an extra umami punch.
DillRelish
